I’ve been pretty obsessed with cooking lately. It’s one of the things I love to do and share with others. My home life has changed pretty dramatically this past year, and so has the care and feeding of my family. I’m separated and two of my four children are now off studying and not living at home full time. So, my two younger boys are the recipients of a lot of extra love in the kitchen.
Last week I made grilled cheese sandwiches and tomato soup, but wanted to make it a little special for them. I garnished the soup with some goldfish. My 13-year-old was concerned I was losing my mind. “Just adding that extra little touch, so you know how much I love you,” I said. I know he secretly loves the extra details.
It doesn’t really fulfill my cooking desires to cook for two boys. They are amazing eaters and very adventurous, but they like things simple. So, to itch my scratch I’ve been working on a new recipe for myself. I’ve tried a lot of versions of pimento cheese, but I really wanted to make my own. It’s not perfect, but it has been so much fun experimenting and playing in the kitchen. 10 out of 10, I highly recommend!
Feeding my family and friends is about love for me. It doesn’t have to be complicated. It can be late night take out with teens. It’s a vehicle for connection. Food unites everyone. We all have to eat to survive, but what we feed our bodies, minds, and souls can be SO much more! Being intentional about what you eat will translate into being intentional in other areas of your life. Don’t eat to survive. Eat to nourish your body. You deserve it! Don’t diet. Seriously, DON”T DIET!!!! Just be intentional about what you eat. Love yourself, feed yourself, and then you can love and care for others. And, don’t we all just want more love?! Of course!
Sending you all my love and I promise when I get my pimento cheese recipe just perfect I will share it!!
